The Diabetic Friendly Chicken Cacciatore
I hope you are seeing the signs of Spring where you are. Here in North Texas it is beginning to be very Spring-like and none too soon! As I sit here at my computer, looking out my upstairs window, I see sunshine and green leaves on the trees. If Spring is enticing you to spend more and more time outside, that may mean less time in the kitchen. Today I posted a recipe for Chicken Cacciatore Fettucine that is healthy and only requires about half an hour to prepare and cook. Toss a salad or steam some broccoli and you can have a quick, easy, and healthy meal in minutes. (If you prefer to use sugar instead of Splenda, substitute the same amount.)

Gelatin Fruit & Cream and No Crust Coconut Pies
Pies make wonderful desserts but some people think pies are hard to make and stay away from them, usually because they have trouble making the pastry crust. Here are some pie recipes that are easy but very tasty. Surprise your family and friends with one of these pies are your next get-together! Choose from an easy Gelatin Fruit and Cream Pie made in a graham cracker crust or this No Crust Coconut Pie which makes its own crust while baking.
GELATIN FRUIT AND CREAM PIE
4-oz cream cheese, softened
1/2 cup powdered sugar
1/2 cup thawed frozen whipped topping
1 6-oz graham cracker pie crust
1 pkg (4-serving size) gelatin (use flavor to compliment selected fruit)
1 pkg (4-serving size) vanilla cook and serve pudding and pie filling
1 1/4 cups water
2 cups sliced fruit (your choice)
Loss and the Slow Cooker
A good way to prepare a good diet food to lose weight is to use the slow cooker. Its easy and convenient, plus you can do it pretty easily with little cooking skill required. However, the recipe must not be too complicated because it defeats the purpose of using the slow cooker. (Which is just to put in food and be done with it) It’s especially useful if you want to motivate yourself to eat a good diet food because you won’t be tempted to eat junk as soon as you get home. Imagine yourself going home to a pleasant aroma that’s both warm and savory, will you get yourself a cold pizza? Definitely not! This can also serve as a deterrent for excuse such as “I’m tired, let’s just eat outside”, or “Let’s just microwave some junk food”.
