Mediterranean Vegetable Lasagna
Eggplant and zucchini slices are combined with cherry tomatoes, red and yellow bell pepper, white onion, garlic, and baked until golden brown and tender. The roasted and seasoned vegetables are layered between lasagna noodles with a delicious white Parmesan cheese sauce, and shredded mozzarella cheese. Topped with additional cheese and baked until brown around the edges and sauce is bubbling.
Delicious served as a main dish, a side Greek salad with vinaigrette, pita bread and tzatziki sauce.
Mediterranean Style Roasted Vegetable Lasagna
Ingredients:
1 Large Eggplant, skin rinsed and rough chopped into 1″ pieces
2 medium Zucchini, skin rinsed and rough chopped into 1″ pieces
1 pound Cherry Tomatoes, blanched and peeled
1 small Red Bell Pepper, seeded and cut into bite-sized pieces
1 small Yellow Bell Pepper, seeded and cut into bite-sized pieces
1 large White Onion, sliced and cut into 1″ squares
2 large Garlic Cloves, crushed
2 tablespoons Fresh Basil, leaves torn so that they stay quite visible
1/4 cup Extra Virgin Olive Oil
2/3 cup Pitted Black Olives, chopped
2 tablespoons Capers, drained
3/4 cup Mozzarella, grated

The Diabetic Friendly Chicken Cacciatore
I hope you are seeing the signs of Spring where you are. Here in North Texas it is beginning to be very Spring-like and none too soon! As I sit here at my computer, looking out my upstairs window, I see sunshine and green leaves on the trees. If Spring is enticing you to spend more and more time outside, that may mean less time in the kitchen. Today I posted a recipe for Chicken Cacciatore Fettucine that is healthy and only requires about half an hour to prepare and cook. Toss a salad or steam some broccoli and you can have a quick, easy, and healthy meal in minutes. (If you prefer to use sugar instead of Splenda, substitute the same amount.)

Fire-Cooked Ingredients
Pasta dishes are remarkably popular and versatile, but it seems like pasta as traditionally prepared can sometimes be bland. Pasta with grilled or fire-cooked meat or vegetables is a wonderful treat. One of the best ways to enhance your pasta dishes is to cook some of the ingredients over a fire pit. So instead of going with everyday pasta dishes, try adding some kick with some fire-cooked ingredients. Here are some ideas for you to use:
Fettuccine Alfredo with Grilled Zucchini
Cut the zucchini into chunks and place in a square of aluminum foil. Feel free to season the zucchini as desired, with salt or garlic. Add olive oil or butter and wrap the zucchini up in the foil. Place the foil package in the fire pit with hot coals and cook for about half an hour. Toss the zucchini in with your fettuccine alfredo pasta.
